Wild Foods Masterclass
Participants will receive a welcome tour of Macreddin Village including The Kitchens and The Wild Foods Pantry, followed by in depth tuition taking them through a full calendar of natural Wild Foods that are available along 327,000km of our Irish Hedgerows. The MasterClass with The Chefs of The Strawberry Tree Restaurant and Evan Doyle, co-author of the best-selling 'Wild Food' will cover identification as well as instruction on how to gather, cook and preserve using traditional methods such as sugar, oil, drying, vinegars and alcohol. After enjoying lunch in The Waterside Lounge, participants will be brought outdoors with The Strawberry Tree’s Wild Food Forager to do some hands on foraging around Macreddin Village.

Myself, my mother and sister attended the Wild Foods MasterClass yesterday and I just wanted to drop you a note to say thank you and tell you what a brilliant time we had. Huge thanks to Evan, Tim and Clotilde (I hope I have spelt that correctly!) and all the staff who facilitated the day. It started on a good note with homemade biscuits and just got better from there. We loved seeing and smelling - and tasting - so many of the wild foods we were being taught about although Almha may never recover from the boozy rowan berries she ate!
Lunch was spectacular, and dessert, once we established what woodruff was, was gone in a second. A special note of thanks to the lovely girl who delivered them to us and had endless patience as we questioned her on its genesis! A gentle walk that ended with the herb garden and a fresh off the plant strawberry was the perfect end to a spectacular day.
